WINE MAKING

The grapes are hand-harvested towards the end of August and beginning of September and softly whole-cluster pressed to prevent color extraction from the skins. The free-run juice is kept separate from the press fraction and allowed to cold settle, inoculated with selected yeast strains and fermented at 17°C. The young wine remains in tank on its lees, with periodical stirring until bottling.


COLOUR

Straw yellow with copper-gold overtones.


BOUQUET

Fresh and mineral.


TASTE

Well-structured palate with embodying notes. Well-balanced with a pleasant consistency on the final.


SERVING TEMPERATURE

Serve cool (12°C)


FOOD MATCHING

Ideal aperitif and with fish entrees.It matches particularly with fish, shellfish and white soups.
