WINE MAKING

Red blend of Merlot, Refosco and Cabernet. The grapes, coming from selected vines and picked at the peak of phenolic and aromatic ripeness, are harvested and vinified separately, each following the wine-making process which best express the varietal character. They all go through extended maceration periods, up to three weeks. The juices are macerated on the skins and fermented without temperature control, with frequent pump-overs and lees stirring after completion of fermentation. The wines are racked into small oak barrels for malolactic fermentation. After bottling the wine continues its aging for several months before release

BOUQUET

Ripe and well-blended bouquet with hints of wild cherry and plum jam


TASTE

Soft and velvety in the mouth, well rounded with "sweet" and well-balanced tannins


SERVING TEMPERATURE

Put the bottle at room temperature (18° C) and possibly open 20 minutes before serving


FOOD MATCHING

A great wine which matches particularly with game, noble poultry, braised beef and ripe cheese.
